I LOVE breakfast for dinner as well as breakfast, as well as brunch, as well as lunch. Midnight snack? Sure.

I will occasionally make more complicated pancake recipes, but I make the recipe below when I've got the itch as well as for guests. The one thing you should ALWAYS do is to whisk the heck outta your liquids. No half-measures with a fork. Really go to town before you even think about the dry goods. It makes all the difference on the final texture. If you have the time, you should also rest the batter before cooking, but I admit I don't always do it.

Let's Go!

Makes five 6" pancakes, can be doubled, tripled, etc.
35 minutes to do optimally, 15 if you're in a hurry

INGREDIENTS:
  • 1 Egg
  • 142g (1/2 cup plus 2tbsp) Milk
  • 13g (1 tbsp) Sugar
  • 1 tsp Vanilla Extract (don't double with the recipe, use your best judgment)
  • 90g (3/4 cup) AP Flour
  • 1 tsp Baking Powder
  • 1 large pinch Salt
  • OPTIONAL: a quarter cup of blueberries, choc chips. etc.

1 - In a medium bowl, dump in EGG, MILK, VANILLA and SUGAR. Whisk the ever-loving crap out of it. It should be homogeneous without a hint of egg floaties.

2 - In another bowl whisk together FLOUR, SALT, and BAKING POWDER.

3 - Bring wet and dry together. Whisk until just integrated. Set aside for 15-20 minutes to hydrate.

4 - Heat your pan or griddle to a low medium. This recipe is for 6" pancakes, so about 45g or 1.5 to 2 oz. Ladle batter and let cook for 2-3 minutes on the first side and 1.5 to 2 minutes on the other. (This is where I add the berries or chunks, right after the pancakes goes down on the first side. Yes, I put a few on each pancake as they hit the heat.)

5 - EAT!

NOTE: I've been asked why I don't advocate for additional fat (butter or oil) in the pancake batter. Feel free to add a tsp of canola to the recipe, it will make for a slightly more tender final product. The reason I don't add it, is that I want a pancake and not a waffle. Adding fat of any kind (beyond what's in the egg) will add to a crispy exterior. I love that in a waffle but not here.
